Interview: 3 questions for blogger and influencer Uschi E. from dukkah.and.greens

Uschi E. ran the blog thefoodieandthefit.de with her daughter Sophia for several years. Both are passionate about enjoyable topics such as food and cooking. They created this platform to show this love to the world and share their passion for food, sport and travel with others. The blog is currently dormant. Sophia has immersed herself in the world of sustainable fashion. Uschi is all the more active on her Instagram channel dukkah.and.greens. Here, the enthusiastic kitchen gardener regularly provides her community with ideas and delicacies from her kitchen. For Becks cocoa™, she has tried out the series of cacaos especials, our current three single origin cocoas: cacao especial no 2, cacao especial no 3 and cacao especial no 4. Uschi has created three very different cocoa mousses. Why does she love the cocoas from Becks cocoa™? We simply ask her:

Becks cocoa: With our three Becks cocoa™ single origin fine flavor cocoas, the especial no 2, the especial no3 and the especial no 4, you have developed three unusual chocolate mousse recipes for us in 2023 and 2024. Could you please describe the Becks cocoa™ especials you used for the mousse recipes? How do they taste, what is special about them? And what is your favorite way to drink or use them?

Uschi E.: I was most impressed by how different these specialty cocoas taste. The Becks cocoa™especial no 2 from Ecuador is fruity and tastes creamy. As it is not roasted as usual, but only fermented at 42 to 47 degrees, all the valuable ingredients are retained. I made a mousse with it, which I spread on a tart. I replaced some of the flour in the cake base with cocoa. Decorated with dried flowers and some sea salt flakes. Simply delicious.

The Becks cocoa™ especial no 3 comes from Vietnam and is incredibly chocolaty. I immediately thought of delicious, creamy chocolate ice cream. That’s why I decided to make a frozen mousse with this single origin fine cocoa. A wonderful dessert that you can prepare perfectly.

The third variety I tried was Becks cocoa™ Single Origin Fine Cocoa cacao especial no 4, which comes from the Dominican Republic. It has a more bitter taste than the other two and is therefore perfect for me to make a mousse with, which also tastes good to people who don’t like it too sweet. Like my husband!

I love all three varieties for a delicious cup of hot cocoa. Preferably with foamed oat milk. It’s like comforting for me, even if you don’t need to be comforted.

Uschi E.: With Becks cocoa™, I can just feel the passion with which this company is run. That’s exactly my thing, because I think that’s the only way to create great things. I’ve already praised the quality and workmanship of the products, but it’s often the little things that win me over to a company. Sustainable thinking, for example the packaging in cans that not only preserve the aroma, but where I can easily peel off the label and continue to use them. Paying small farmers fairly so that they can make a living from their secure jobs. So there are many reasons why I love this delicious cocoa.
