Vera has picked out her favourite brownie recipe for you, which she has been baking again and again for years. You don’t need to bother with the water bath, because the brownie star recipe does not contain baking chocolate, but pure cocoa. Since it contains only a few ingredients, it stands and falls with the quality of those ingredients. Good thing there is Becks cocoa cocoa!
For the brownies, it should be the pure Criollo, but Sinnerman with its cinnamon note is also great – and goes well with the cinnamon stick! Here comes the recipe from Vera:
Recipe for 12 rectangular brownies – or 6 brownie stars plus a lot of offcuts:
- 250g butter
- 70g cocoa (e.g. Criollo or Sinnerman from beckscocoa)
- 4 eggs
- 200g sugar
- 170g flour
- 100g ground hazelnuts
- Mark of a vanilla pod
rectangular oven dish, approx. 25 x 20cm
You still need this:
Cinnamon sticks, toothpicks, icing sugar, icing for the decoration
Preparation Brownie Stars on a Stick
- First heat the butter slowly in a saucepan until just melted (Thermi: 3 minutes / 70 °C / speed 1).
- Then add the cocoa powder, stir (Thermi: 30 seconds / speed 2) and leave to cool slightly.
- Then add the eggs, sugar, flour, hazelnuts and scraped-out vanilla pod and mix well with a hand mixer (Thermi: 50 seconds / speed 4).
- Butter the tin, pour in the batter and bake in a preheated oven at 180 °C for approx. 40 minutes. Please test with chopsticks, every oven is different – the dough should still be slightly soggy inside.
- Remove the dough from the tin, cut into pieces or cut out stars and decorate with icing or icing sugar. And of course: don’t forget the cinnamon sticks as stems. If they are too short, insert a toothpick as an extension. You have 6 delicious brownie stars!
